5 cups apples, sliced & peeled
2-4 Tbsp brown sugar
½ cup regular rolled oats
½ cup packed brown sugar
1/4 cup all-purpose flour
¼ tsp each of ground nutmeg & cinnamon
¼ cup butter
¼ cup chopped nuts or coconut
Filling: Place fruit in a 2 quart, square baking dish. Stir in 2-4 Tbsp brown sugar.
Topping: In a medium bowl, combine oats, brown sugar, flour, & spices. Cut in butter until mix resembles coarse crumbs. Stir in nuts. Sprinkle topping over fruit.
Baking: Bake at 375°F 30-35 minutes or until fruit is tender & top is golden.

This recipe can be adapted
in several ways. Obviously, using a Dutch oven in camp will work great. Steam baking will do well to, but it won't be crispy. For me, I'll reduce it for one or two people by using only two apples, not peeling them, and premixing all the dry stuff (half quantities on all) into a plastic bag, and carry the apples and dry stuff in a large, Ziploc bag. I'd carry butter in a separate bag, or use extra virgin olive oil instead. Steam bake about 20-25 minutes. Make sure there is enough water in the steamer.

That oughta be a dessert for one hungry, or two normal paddlers (if you know any normal paddlers :wink: ) in camp.
