DEEP SOUTHERN ILLINOIS
Good Recipe: BUBBA GUMP HUSHPUPPIES

2 cups self-rising cornmeal
1 cup self-rising flour
1/2 teaspoon salt
3 tablespoons sugar
3 large eggs, lightly beaten
1 1/2 cups (6oz) shredded Cheddar cheese
2 jalapeno peppers, seeded and chopped
1 (17oz) can cream-style corn
1 large onion, chopped
vegetable oil

Combine first 4 ingredients in a large bowl. Combine eggs and milk; add
to dry ingredients, stirring just until moistened. Stir in cheese,
pepper, corn, and onion (do not over-stir batter).
Pour oil to depth of 2 inches into a small Dutch oven; heat to 375*.
Carefully drop batter by rounded tablespoons into oil; fry puppies, a
few at a time, 3 minutes or until golden brown, turning once. Drain on
paper towels.
Yield: 3 1/2 dozen

Pineapple Fritter

Say those hush puppies sound great! I was thinking that while you are frying those us, you could fry these up for dessert. The oil is alread hot!!

PINEAPPLE FRITTERS

Ingredients:
1 cup low fat bisquick or biscuit mix
12 tablespoons sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 egg
1/3 cup milk
1 tablespoon lemon juice
1 cup crushed pineapple, drained

Instructions :
Mix and sift all dry ingredients into a small bowl. Beat egg slightly and add milk and butter. Stir the liquid mixture into the dry ingredients, beating until you have a smooth batter. Add lemon juice and drained pineapple. Drop into hot deep fryer using a teaspoon. Fry until golden brown. Remove, pat excess oil off with paper towel, and then roll in sugar or powdered sugar while hot.

I love the fried pineapples AND the fries bananas!
Slice the bananas in quarters and then carry on as ya'll did with the pineapples.
I use Tempora batter instead of Bisquick...
Turn anyone over to fried veggies with this also.
