I came up with this simple recipe a while back.

Chicken Pasta

3-4 boneless Chicken Breasts
3-Large Onions(quartered then sliced)
garlic(as much as you like minced)
1- cup diced Roasted Red Pepper(best but could use fresh)
Basil, oregano or whatever you like
Salt and pepper to taste.
1-pound pasta of choice
Saute onions & peppers in olive oil until they start to carmelize. Add chicken( cut up into bite size pieces. Not to small cause they shrink.) Add garlic and herbs of choice. Cook chicken until done.
Toss with cooked pasta or serve on top with plety of grated parmesean cheese. Drizzle more olive oil on top if you wish.
