Jean ( http://www.adventurefoods.com )sent this to me and it is from the Carolina-Country-Cooking Kitchen. ( http://www.carolina-country-cooking.com/ ) It just looks like some good cookies to me. If anything the following disclaimer should be about eating to many of them and getting your wife mad at you or vice versa depending on who is doing the baking.

Cookie Lady Recipes

DROP MOLASSES COOKIES evoke thoughts of treats of days ago.
Cream together 1/2 cup vegetable oil, 1/2 cup sugar, 1/2 cup
molasses. Stir in 1 beaten egg and 1/2 cup sour milk,
2 teaspoons vanilla.

Sift together 2 1/2 cups flour, 1/ 3/4 teaspoons baking soda,
1/2 teaspoon salt, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg,
1/4 teaspoon allspice. Some cooks like to add 1/2 teaspoon ginger.
Add dry ingredients to creamed mixture, stirring well.

Drop by teaspoon onto greased cookie sheet. Bake at 375 degrees F. for 10-12 minutes.

Oatmeal Chocolate Chip Cookies
******************************

1 cup of brown sugar, mix to get out lumps
1 cup of white sugar
2 eggs
1 cup of shortening
1/2 teaspoons of vanilla
1 to 1 1/4 cups of flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1 - 6 oz package of chocolate chips
1/2 to 1 cup of chopped walnuts
3 cups of Quaker oats

Mix brown and white sugars together, get all lumps out.  Add eggs and mix well until smooth.  Add shortening, mix until smooth; add vanilla and mix well. Add flour to baking soda and salt, sift together.  Add to above.  Add chocolate chips and nuts, mix well.  Now start adding Quaker oats a little at a time (1/2 cup).  Mix very well.  You may not need all three cups if batter starts to become to dry.  Use your own judgement.  Place on greased cookie sheet by rounded teaspoon, about 1 1/2 inches apart.  Bake approximately 8 to 10 minutes.
Let cool on racks.  Makes 6 to 7 dozen.

White Sugar Cookies
******************************

2 cups of white sugar
1 cup of shortening
3 eggs
2 cup of buttermilk
1 teaspoon of soda
5 cups of flour
1/2 teaspoon of salt
3 teaspoons of baking powder
1 teaspoon of vanilla

Cream sugar, shortening, eggs and vanilla then alternatel add flour, salt, baking powder mixture with buttermilk with soda.  Drop by spoon.  Sprinkle with any kind of toppings.
Bake 8 minutes at 375 degrees.

Old Fashioned Lemon Sugar Cookies

3 cups of unsifted flour
2 teaspoons of baking powder
1/2 teaspoon of salt
2 cups of sugar
1 cup of shortening (Crisco)
2 eggs
1/4 cup oflemon juice (prefer "Minute Maid 100% Pure")
Additional sugar

Preheat oven to 350 degrees.  Stir together flour, baking powder and salt; set aside.  In large mixing bowl, beat sugar and shortening until fluffy; beat in eggs.  Stir in dry ingredients.  Add in lemon juice.  Mix well.  Chill 2 hours or overnight.  Shape into small balls, 1 1/4 inch or less; roll in additional sugar.  Place on greased baking sheets 2 inches apart; flatten with egg turner.  Bake 8 to 10 minutes or until lightly browned.

Molasses Sugar Cookies

3/4 cup of butter
1 cup of sugar
1/4 cup of molasses
1 egg
2 cups of flour
2 teaspoons of soda
1 teaspoon of ginger
1 teaspoon of cinnamon

Melt butter and cool.  Add sugar, molasses and egg.  Beat> well.  Sift together flour, soda and spices.  Add to first mixture.  Mix well.  Chill.  Form into 1 inch balls and roll in sugar and place on greased cookie sheets 2 inches apart.
Bake 8 to 10 minutes at 330 degrees.

Country Cookies

2 cups of vegetable shortening
2 cups of granulated sugar
2 cups of brown sugar
4 large eggs
2 teaspoons of vanilla
3 cups of flour
2 teaspoons of soda
2 teaspoon of salt
4 cups of quick cooking oatmeal
2 cups of coconut
2 cups of chopped nut meats

Cream shortening and sugars, add eggs and vanilla, beat until blended, add flour, soda and salt.  Fold in oatmeal, coconut and nuts.  Drop by large tablespoonful on ungreased cookie sheet.  Bake at 350 degrees for 12 to 15 minutes.Center will be soft.

Old Fashioned Molasses Cookies

1 cup of sugar
1 cups of shortening or butter
3 eggs
1 teaspoon of ginger
2 cups of molasses
2 tablespoons of soda
3 1/2 cups of flour

Combine first 4 ingredients.  Set aside.  Heat molasses and soda, beat while heating about 1 minute.  Combine the 2 mixtures with enough flour to make a stiff dough.  Roll out thin. Cut with cookie cutter.  Place on cookie sheet.  Bake at 400 degrees for 8 to 10 minutes.  NOTE: This recipe is over 100 years old.

Grandma's Chocolate Chip Cookies
******************************

1 cup of butter
3/4 cup of brown sugar
3/4 cup of white sugar
1/2 teaspoon of soda
2 eggs
1 teaspoon of vanilla
2 1/4 cups of plain flour
6 oz. of chocolate chips
1 cup of walnuts

Mix 1 cup butter, 3/4 cup brown sugar, and 3/4 cup white sugar.  Add 1/2 teaspoon soda, 2 eggs and 1 teaspoon vanilla. Mix in 2 1/4 cups plain flour, 6 ounces chocolate chips and 1 cup walnuts (optional).  Bake at 325 degrees until golden brown.

Don't forget (like you would) to take some with you when out paddling and camping....... ENJOY
