Coat doves in this habanero sauce and they loose their bird of peace status.
Habanero Mustard Sauce
1/3 cup prepaired yellow mustard
2 to 8 habanero peppers seeded and chopped
2 Tbsp.minced ginger
1 Tbsp. minced garlic
2 scallions (both green and white sections), finely chopped
pinch of allspice
1 Tbsp. curry powder
1 Tbsp. ground cumin
1 Tbsp. ground coriander
2 Tbsp. dried oregano
3 Tbsp. freshly cracked black pepper
2 Tbsp. kosher salt
Put all this stuff in the blender and puree until smooth.
Adjust the heat with the habaneros. 2 is very spicy and 8 will put you on the moon with Alice Cramden. Might want to ease in on it.
Now the doves
1 lb. dove brest, 15 or so morning doves
1 lime halved
2 Tbsp.freshly chopped cilantro

Start with a medium high fire in your grill
Pour the sauce over the doves in a bowl making sure th get an even coat on them
Grill the breast over the flame turning them now and again until well browned, about 4 minutes per side. Cut one open to check if it is cooked good enough foryou. Put the breast in a bowl and squeeze the lime haves over them and toss them with the cilantro.
Might not hurt to have a glass of milk handy in case you misjudged your habanero.
