Starting the New Year out the correct way.
Cooking some Hopping John for supper.
Started soaking a mess of Black Eye Peas last night before hitting the sack.
Up this morning and got the crock pot out since this is a long , low heat meal.
1... Filled the crock pot with the Black Eyes , then sliced/diced up about 5 good size cups of the Ham left over from Christmas and added it to the peas.
2... Next a good size onion was sliced and diced and added , several stalks of celery were slice and diced and added with a decent amount of garlic. Then a good pinch of Cayenne pepper. Added some water to keep everything wet.
The pot turned on low and set aside to cook everything for our supper.
3... Just before supper I will do some rice to have with it and we are set.
One trick I did with the Hopping John was to add some Superior Toutch "Better than Bullion" Ham base to it. www.superiortouch.com
I will add some to the water for the rice so the rice will pick up some more of the ham flavor to the meal.
