My kids thought I was nuts when I made this but they went nuts when they tasted it:
Drop a couple eggs in the pan like you frying over-easy but break the yokes and mix a little: "pan scrambled"
Add some salsa and oatmeal. Mix and cook until it just starts to hold it's shape. Turn the heat off, lay a piece of cheese on the top, drop a couple slices of bread for toast. Cover the pan. When the taost is up, the cheese will be melted and eggs finished cooking. I add a slice of ham sometimes too.
