These dang things are addictive!! I bet you can't eat just one!! :roll: Kahuna

Parmesan Crackers
1/4 lb unsalted butter, room temp
4 oz freshly grated Parmesan
1 tsp minced fresh thyme
1/2 tsp kosher salt
1/2 tsp fresh ground black pepper
1 1/4 cups flour

cream butter for 1 minute. add Parmesan, thyme, salt and pepper until combined. Add flour and combine until mixture is in large crumbles, about 1 minute. add water if dough is too dry (about 1 tsp.)

Dump dough onto a floured board and press into a ball. Roll into a 9 inch log. Wrap in plastic and chill for at least 30 minutes or up to 4 days. Cut into 3/8" rounds and bake in 350 degree preheated oven for 22 minutes on parchment lined sheet until lightly browned. Might rotate pan once during baking.
