This straight from the sides of the Quaker Oats Oatmeal box:


PRIZE-WINNING MEATLOAF

INGREDIENTS:
1-1/2 lb ground beef
1 cup tomato juice or sauce
3/4 cup Quaker Oats
1 egg, lightly beaten
1/4 cup chopped onion
½ tsp salt
1/4 tsp black pepper

MIX-INS: Customize meatloaf by adding:
½ cup corn
½ cup chopped bell pepper
2.05 oz mushrooms, drained & sliced
1/3 cup grated Romano cheese
2 Tbsp parsley or cilantro, finely chopped

COOKING:
1. Heat oven to 350F.
2. In large bowl, combine ingredients; mix lightly but thoroughly
3. Press meatloaf mixture into 8"X4" loaf pan
4. Bake 1 hour or until meatloaf is to medium doneness (160F>) and center is no longer pink. Let meatloaf stand 5 minutes; drain off any juices before slicing.

TOPPINGS: After removing meatloaf from oven and draining, sprinkle with 1 cup shredded cheese. Let stand 5 minutes before serving.

Spoon prepared spaghetti sauce, pizza sauce, barbeque sauce, or salsa over each serving

Almost Meat Loaf......

I use 1/2 the amount of beef by replacing it with ground turkey so it is 1/2 beef and 1/2 ground turkey......
If Swampy is reading this those two 1/2 's make for a full amount of the required meat. :roll: ( For Swampy I do have a recipie that you can use TOFU in place of the meat) :roll: Actually it is quite good and you would never know it was Tofu since it picks up all of the flavors in the loaf. No fat to clog your artriers , just good taste.

The tomato juice can be replaced with Cambells Tomato soup, straight out of the can, not diluted with water or milk.

I agree on turkey, but may replace all of it. (Swampus Mathematicus - that would be 100% which, in your case, is nearly complete.)

Only caveat is, turkey SOAKS up spice flavor like a sponge. I think one would have to triple the onion and add about 3 Tbsp of minced garlic.

As is, though, this is a killer meatloaf. Add some baked potatoes and asparagus or broccoli as a veggie, and it is fit for a king. Even Jarvis likes it.

Fellas,

I think ya oughta add that extra onion 'n garlic no matter what. I wonder what okra instead of bell pepper would do? I dont have nuthin' agin a bell pepper.......jest wonderin'.

Some pickled okra on the side for snacking and a good helping of fresh graded Horse Radish an Sage in the mix if you are using any ground Turkey.
You can never use to much Onion and Garlic. Some Hot Sauce or Cayenne would not hurt things.
Then take the juices from the meat loaf and make some finger licking good gravey with them. Put it over some mashed , garlic , potatoes or good rice.

If you do the mashed potatoes the old fashion by boiling the spuds and then mashing them by hand..... when you take that hand masher to them add one egg per one cooked potato along with some cream ( you can use milk) and smash it all together.

The residual heat in the potatoes will cook the eggs as you smoosh everything together, some, light, fluffy, better then normal spuds. ( It is an old southern, cooking, secret for making some good mashed potatoes that I was taught to me by a southern, Black, Lady and she knew how to cook) Yes, Sir she sure knew how to cook, God rest her soul.

When we get done with Jacks Recipe it will not even be close to the original one. :lol:

Recipes, like directions, are a convenient jumping-off point. Remember, "Modification in everything!" (Some Greek said that.)

I think I have just gotten into a ton of trouble so we better forget I said that and just stay with the cooking idea.)

Iron chefs Chuck 'n Jack,

I got ta where I really liked baby okra.....raw. It wuz mitey good in a salad, but bye 'n bye, it tore up my gut, so I dont eat it raw no more. :cry:

I like pickled okra, however, I figger some okra would do well baked in the meatloaf. It would be worth a try to add some instead of bell pepper.

We gotta git this place spick 'n span, so we been tryin' ta clean out a heap a stuff. I got this big jar* of pickled peppers in the ice box. I dont know when I first begun ta put peppers in it, but it haz been in there fer years....mostly jalapeno and banana peppers, but I bet one 'er two habanero went in somewhere along the line. I slice 'em up.

I had jest finished off a jar of sweet pickles 'n az I wuz about ta chunk it, I sez "what if I put some a them pickled peppers in the sweet pickle juice?" That iz how Mister Alva Edison come up with Con Edison. In a few days I aim ta try one. Been addin' peppers 'n vinegar fer quite a spell.

I got a heap of pickled peppers....found two more jars up in the cabinet today. Okra aint the only thing that tore up my gut. :mrgreen:
