Great dinner tonight. I walked into the little fish market behind the violin shop and bought some shrimp for dinner. These were 8-10 count shrimp.....so a pound has only 8-10 shrimp in it. Big guys. So big, in fact, that i just can't toss the heads out. My friend John Wong taught me to pop the head meat out, legs and all, toss them in the dry mix and deep fry them. Very tasty, different flavor than the main part of the shrimp, and CRISPY. The legs all splay out and they, do indeed, look like SEA SPIDERS. Waste not, want not.

Yes, there was also the rest of the shrimps, some fresh Lake Maurepas Catfish and fresh shucked Gulf oysters. All were rolled in the Zatarains Fish Fry and fried at 375 degrees. A plate of that and a couple of Buds.........it doesn't get much better than that.
