Shrimp and Couscous salad.

Yesterday the heat index was 104 around here so it is time for the going over to cool Summertime suppers and away from the normal cooking.
I found some Wheat Grits ( that's what I call them , just to discourage Jack. :lol: ). They are normally called Couscous.

1cup of ( cooked ) Couscous. Can use more if you want to.
1 1/2 pounds of cooked and cleaned shrimp.
1/2 pound of snap peas. Cut into pieces.
1 pint of Cherry Tomatoes. Cut in half or quarters.
2 Scallions. Diced .
2 Tablespoons of olive oil.
2 teaspoons lemon zest.
3 Tablespoons Lemon Juice , Fresh.
1 Cucumber. pealed and Diced, the amount is to taste.

Combine Shrimp, snap peas , tomatoes , scallions , oil , lemon 3/4 teaspoon salt , 1/4 teaspoon black pepper , cucumber. Toss everything together and then serve it.

Note. Do not make this and hold it for a later supper , the lemon juice and zest will turn the shrimp into mush if it sits for a while. Have everything ready and combine it just before serving it.
I like to use the Near East , Instant , Roasted Garlic and Olive Oil Couscous. Cooks in 5 minutes and tastes really good.
