I was killing some time and over at Recipiesource ( http://www.recipesource.com/ ) in the North American section and found this recipe for Spicy Black-Eyed Peas....... Dam it does sound really good.
On the camping trips when I go fishing I like to take Black Eyed Peas ( with some celery and onion ) plus some Rice with me to use together as a side dish , Toss some Ham in with them and you have what we call Hopping John as a main dish. That's in case the fish aren't biting. :roll:

Amount Measure Ingredient -- Preparation Method

15 Oz. Can Blackeyed Peas
1 Tablespoon Vegetable Oil
1 Large Onion -- chopped
3 Cloves Garlic
1 Tablespoon Green Pepper -- minced
1/4 Teaspoon Cumin
1/2 Teaspoon Tumeric
1/4 Teaspoon Cayenne Pepper
1 Cup Tomato Juice -- * see note
2 Tablespoons Lemon Juice

* We used diced tomatoes.

Heat the vegetable oil in a large skillet and fry onion until golden.
Add garlic, green pepper, tumeric, and cayenne pepper and fry
for 2-3 minutes. Add tomato juice (or tomatoes) and cumin and
cook for 5 minutes. Next add black-eyed peas and a little water
if needed. Let it simmer for 15 minutes. Stir in lemon juice.
Serve over rice or cous cous.
