Zucchini Fritters

    My youngest Grandson is gluten intolerant so my Daughter is constantly looking for recipes that actually taste
    good. She found this recipe the other day and made them and I loved them.
    Zucchini Fritters
    2 medium zucchini (grated)
    1/4 onion (grated)
    1/4 cup parmesan Cheese (grated)
    1/2 cup gluten free all purpose flower
    2 eggs
    Sea Salt to taste
    Fresh ground pepper to taste
    onion powder to taste
    Garlic powder to taste
    Oil to fry them in. `Use any kind of oil. veg. oil , olive, avocado, canola, peanut, ect.
    Heat oil in pan (she used an iron skillet
    Mix all ingredients together and drop in oil by the spoonful (wooden spoon)
    Cook on both sides till brown.
