On YouTube I was watching Bear at Journeyofbear and he had a great idea for eggs with something besides bacon when camping. He used some Pepperoni from a package of sliced Pepperoni. The pepperoni slices furnish the grease to cook the eggs with. The cooked pepperoni also has the salt and pepper you would want to add to the eggs. He also has a neat trick on how to take whole eggs with you for a overnight camping trip.
A Hint .... If you are a fan of thick sliced bacon the get a log of the Pepperoni and slice the thickness how you would want it.

Been fryin' up pepperoni for years both out and about and at home, Diced, fried and drained and added to baked beans ummmm good. Have made PLT sandwiches and added fried pepperoni to all sorts of salads. Basically, it can be used in anything you would put bacon in. If you use a pepperoni log and slice it on a sharp bias, you get a longer slice to fry up.

Now I'm gettin' hungry!:D

I'm going on a camping trip in the near future to try out a new hammock system ( ultralight ). I'm thinking it would be a good time to try this Pepperoni and eggs breakfast. It looks really good and with your idea of slicing the Pepperoni log on the bias is even better.
I never thought of frying the Pepperoni we always have had it ( or Summer Sausage ) sliced with Ritz crackers and some good cheese as snacks.

Everything in this would be pack-able.
I wonder how it would be if you sliced it and then fried it part way , When it nice and warm drop some mozzarella cheese ( about two sticks sliced ) over it. Then add some diced Sun Dried Tomatoes while the cheese softens. Now put a ( warmed if you want to ) tortilla on it . flip the pan and have a improvised pizza. You would be building a pizza in reverse.
I'm thinking that in a non stick ( backpacking ) pan the grease that is released from the pepperoni would keep the cheese from sticking to any part of the pan it touches especially if you use a lot of pepperoni as the base.

Summer sausage also fries up reasonably well. Makes a great sandwich with biscuits. I've seen pizza made with tortillas and various fixin's but not done upside down. With a decent non-stick pan, it should work fine (in theory, anyway). Let us know how it turns out.

Something that I use as a plare when camping is a frisbee, turned upside down. Light weight, unbreakable (for normal folks, anyway), and fun besjdes.

Pepperonr is very aromatic. It will attract critters. Be sure to wile your hands kn your buddy's shirt.

My weapons for this experiment.
1. A 7 1/4 inch outside measurement , 6 inches inside , Evernew titanium , non stick frying pan.
2. A Evernew Appalachian Titanium set.
3. Bridgford Pepperoni already sliced.
4. Sargento Mozzarella Cheese slices. ( 3 slices )
5. California Sun Dried Tomatoes , Julienne cut. ( amount determined by the cook ) I had about 1 1/2 tablespoons.
6. La Banderita soft taco , flour tortillas , large. ( I had to trim it to 6 inches to fit in the pan.)

Prepare everything before starting.
I put everything on a large paper plate.

I lined the pan with the Pepperoni slices overlapping each other.
When placed over the heat it was really quick when the Pepperoni started cooking. (It's surprising the amount of grease in them )
The Pepperoni stared to curl and , for better words , get translucent . I removed the pan from the heat and put the cheese over the Pepperoni covering all of it. ( I had divided the cheese in half )

The pan was placed back over the fire and I sprinkled the Sun Dried Tomatoes over the cheese. Immediately placed the Tortilla over everything and after about 15 seconds removed the pan from the fire.
I placed a small paper plate over the tortilla and pressed down on it to force everything together. Then I placed a larger paper plate over the pan and inverted it.
Removing the pan from the paper plate the pizza was on the plate. Nothing stuck to the pan , all that was in there was some pepperoni grease.
I took a paper towel and blotted up any extra grease on the pizza from the pepperoni , sliced the pizza into quarters and tasted it.

It has or I should say HAD a good flavor since there was nothing left after the tasting. :) It was pleasantly spicy , I think it was from the Sun Dried Tomatoes.

In Summery.......
Easy to make , cooks in a hurry ( Getting everything together/ready takes longer then cooking it ) has a great flavor with a spicy bite to it.
Would I make any more ... YES. Would I use some tomato powder and make a tomato sauce for it , very possible. This would be really good on a camping trip and don't forget to retrieve that Beer from the steam before sitting down to enjoy this.

A first cousin to thst, is a casadilla. Twp soft tortillas fried a few minutes, flip them kn the pan, remove top one. Turn down heat. Use short chunks of cheese (about pinky sized) to build a perimeter fence around tortilla in pan. Fill center with chopped onions & pepper, plus other goodies (olives, mushroom, cheese, tomato, etc.). Replace top tortilla, and lightly press into place. Heat a minute more, and slide off onto plate. Add tobasco, slice into pie-type slices. Enjoy.

In place of using short chunks of cheese , get some of the string cheese ( it comes in all different flavors ). Lay a piece on a plate and cut it in half lengthwise. Put the flat part down on the bottom tortilla and continue using half pieces till you have that dam built all the way around.

Can't say as I'd want to eat pepperoni, but it might make a good stink bait for cat fish. I just might give it a try someday........

Mike.. Do you ever have Pizza , normally it's covered in Pepperoni. Besides Sausage , peppers , onions , cheese , tomato sauce and anything else that strikes a persons fancy , even Pineapple.:eek:
Dam , now you have me thinking about a Fried Catfish ( all you can eat ) dinner.
