Shark Kabobs

Cut you some 1/2 inch chunks of carrots and blanch them. Alternate carrot pieces, shark meat, and pineapple (I use fresh pineapple, cut into 1/2 inch cubes, myself.) until you have four pieces of meat on each skewer.

For a marinade, mix yourself 1/2 cup of Oj, 3 tspns of soy sauce and 1/4 cup of melted butter. Suspend the skewers over some foil and baste the 'bobs with the marinade. Broil for about 4 minutes, turn over, baste, and broil another 4 minutes. Serve over rice.

Grilled Shark Steaks

In cold water, rinse yourself 1 inch thick shark steaks and pat dry.

In a bowl, combine 1/3 cup of lime juice, 1 tspn of lime zest, 1/4 tspn of minced ginger, 1 tspn fresh ground pepper, 2 minced garlic cloves, 1/2 tspn of olive oil and 1 tspn of honey.

Toss the shark meat in the mix and coat it completely Cover the shark meat with plastic wrap or in a a zip lock bag and let it marinate for a half hour at room temperature. Take the shark out of the marinade and grill it for five minutes on each side. Brush with what is left of the marinade while cooking.
