David, this makes a good dry rub.

Emeril's Creole Seasoning (Bayou Blast)
Categories: Emeril, Seasoning
Yield: 2 /3 cup

2 1/2 tb Paprika
2 tb Salt
2 tb Garlic powder
1 tb Black pepper
1 tb Onion powder
1 tb Cayenne pepper
1 tb Oregano
1 tb Thyme

Combine all ingredients throughly.

I had a chance to buy a Cobb for a good price one time, passed it up and i've been kicking myself ever since. How do you like yours?
