INGREDIENTS

* 1 (16 ounce) package dry corn bread mix. ( They say not to use Jiffy since it has sugar in it but it would ad a little sweetness if used)
* 2 tablespoons butter
* 1/2 cup chopped celery...Or one cup depending on taste. ( cream of celery soup can be used)
* 1 small onion
* 2 eggs, beaten
* 2 cups chicken stock
* 2 tablespoons dried sage... ( Depending on taste more might be needed if it is old.)
* salt and pepper to taste

DIRECTIONS

1. Prepare the dry corn bread mix according to package directions. Cool and crumble.
2. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
3. In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
4. In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
5. Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

Sounds tasty, Chuck. Carol and I had lunch yesterday right next to the Jiffy factory. It's in Chelsea, Michigan, where Jeff Daniels lives.

I like Jiffy pizza crust mix to make focaccia. Add rosemary and minced garlic to the dough. Spread it out flat, dimple the top with your finger tips (AFTER you wash them, of course), drizzle on some EVOO (extra virgin olive oil), and sprinkle on salt, more rosemary, and more garlic.

Already had the corn bread made ( always have some on hand , makes a good snack) so the stuffing will be done up this afternoon then a rather large 1/2 turkey breast and some taters , corn on the cob , string beans , cranberry's and home made gravy for the stuffing and taters. Looking forward to supper and better yet , the left overs. :D

Nope no Indians or Pilgrims this time. Not doing a hunch of venison and half a hog to go with the turkey. Not even doing the p-can pie or the apple cider , grits and collard greens , not even the biscuits and cane syrup for the biscuits.

Just plenty for two southerners and one starving ( he thinks he is most of the time when the vitals are served up ) dog. :lol:

Just some thoughts here ...Boss....If you like cornbread. :roll:

Since that stuffing is nothing more then cornbread , celery , onions , sage , salt an pepper with some eggs and chicken stock. All of the things that will go with anything for a good meal.

WHY NOT...........

Mix it up , grease the pan and have some fun.

1. Add some cooked crumbled sausage to it to make a sausage and corn bread meal with the rest that is in it.
2. Or put some turkey ( already cooked ) in it for a meal.
3. Ham would not hurt anything since the basic ingredients would go with it quite well.
4. Crawdads would be just as good , the meat not the whole bug , plus use the stock from them in place of the chicken stock with a good sprinkling of Cayenne pepper. Crab or shrimp would work , also.
5. Add some bell pepper and any of the above to it , bake it in a round container and call it an oven meat and corn bread pie.

Hell , cornbread , onions , celery and the rest goes with anything , it would all be in one container , want to get fancy then slice up some hard boiled eggs and put them in when there is about an 1/8th of an inch ( or less) of the batter in the pan , then add a little more batter ... the main item and then the rest of the batter....... Cook and later have fun eating it.

Yep this has a ton of possibilities for something different and simple but tasty for meals. :D

A word of warning .........
Glass or Corning Wear are the best to do this in , metal ( is a NO-NO) Several reasons but the main ones are that when it is done after about 30 min the sides will pull away from the pan and there will be a fine brown line around that pulled away area from the sides.
It is done but the rest of it still might be bubbling so when you look at it you will think it needs to cook longer. I let mine go for 15 longer or 45 min total time and it still came out just right.
This is not the fall apart dry ( sawdust like ) stuffing it is quite moist but it is solid when done , not runny , just dang good and really moist like a really decent cake should be. Guess that is why it is called a Johnny Cake. :roll:
