Easy Smoked Sausage Skillet Dinner.

    I made this tonight for the wife and myself. We really liked it and it is easy and quick to make.

    1 pkg Hillshire smoked sausage , diagonally sliced , thin.
    2 Cloves of garlic crushed. ( I used 3 )
    1/4 cup olive oil.
    1 large red pepper, sliced thin
    1 small yellow onion , sliced thin/
    1 pkg frozen broccoli , thawed. ( I added it while frozen , I put the lid on the pan and let it steam for a few minutes )
    1/2 cup chicken broth ( or water )
    1/2 cup tomato sauce.
    2 cups cooked instant rice.
    1/2 cup shredded mozzarella cheese ( I used a whole cup )

    Heat olive oil and garlic in skillet , stir in sausage slices and cook until browned.
    Add pepper , onion , broccoli , broth and tomato sauce and simmer for 10 minutes or until vegetables are tender and the liquid is absorbed.
    In the meantime prepare the rice according to the package directions. Stir the rice in to the skillet , sprinkle with the cheese and serve.
    ( I cooked the rice before starting the rest )
