Healthy Lemon Bread

We call this Lemon Bread, because it sounds healthier than Lemon Cake.

Fun to make, great fun to eat. Easy to make on short notice and carry in to the Credit Union when you are applying for a loan.

Lemon Bread


1 C. sugar 1 1/2 C. flour
1/2 C. margarine 1/2 t. salt (Opt)
2 eggs 1 t. baking powder
grated rind of one lemon(or lemon extract) 1/2 C. milk

Blend sugar, shortening and eggs. Add and blend lemon rind ( or use 1/4 to 1/2 t. lemon extract). Add flour, salt and Baking powder. Blend thoroughly with the milk. Pour batter into small loaf pans which have been buttered and floured. Bake 55 minutes at 350 Degrees.

Then: mix 1/2 C sugar with juice from one lemon( or equivalent amount of bottled lemon juice . Poke holes in bread with a fork and pour mixture over, let stand 15 minutes before removing from pan.
