Honey Bread
*******************************

2 1/2 - 3 cups of flour
1 cup of uncooked, oat bran hot cereal
1 package of dry yeast
1/2 teaspoon of salt
1 1/4 cup of water
2 tablespoons of honey
2 tablespoons of margarine

Combine 1 cup flour, oat bran, yeast and salt.  Heat water, honey and margarine until very warm (120-130 degrees F.).
Add to dry ingredients.  Beat until moistened.  Continue beating 3 minutes.  Stir in enough remaining flour to form a stiff dough.  Knead on lightly floured surface 8-10 minutes until smooth and elastic.  Place in greased bowl.  Cover and let rise in warm place 30 minutes or until doubled.
Punch down.  Shape into loaf.  Put into greased loaf pan. Let rise until doubled.  Bake in preheated 375 degree oven
35-40 minutes. Cool 1 hour before slicing.

Poppy Seed Bread
*******************************

2 1/2 cups of sugar
2 1/2 cups of oil
2 cups of evaporated milk
5 eggs
1/2 cups of milk
2 1/2 teaspoon of vanilla
5 cups of flour
4 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1/2 cup of poppy seeds

Preheat oven to 350 degrees.  Generously grease 2 (9 x 5 x 3 inch) loaf pans.  Combine first 5 ingredients in large bowl and mix on medium speed, until well blended.
Sift together flour, baking powder and salt.  Blend into egg mixture on low speed.  Add seeds and vanilla and beat until smooth.  Turn into pans and bake until golden.

Pumpkin Bread
*******************************

1 1/2 cups of flour
1 cup of sugar
1 teaspoon of baking soda
1 cup of pumpkin puree
1/2 cup of vegetable oil
2 eggs, beaten
1/4 teaspoon of nutmeg
1/4 teaspoon of cinnamon
1/4 teaspoon of allspice
1/2 cup of chopped nuts
1/2 cup of raisins

Preheat oven to 350 degrees.  Sift together the flour, sugar, and baking soda. Mix the pumpkin, oil, eggs, 1/4 cup water, and spices together.  Then combine with the dry ingredients. Do not mix too thoroughly.  Stir in the nuts and raisins.
Pour into a buttered 9x5x3 inch loaf pan.  Bake 50-60 minutes
at 350 degrees.

Dill Bread
*******************************


Soften 1 package active dry yeast (or 1 cake) in 1/4 cup warm water.  Combine in large mixing bowl: 1 c. creamed cottage cheese, heated to lukewarm.

2 tablespoons of sugar
1 tablespoon of instant minced onion
1 tablespoon of soft butter
2 teaspoons of dill seed
1 teaspoon of salt
1/4 teaspoon of soda
1 unbeaten egg
Softened yeast

Add 2 1/4 to 2 1/2 cups all-purpose flour to form a stiff dough, beating well after each addition.  Cover with dish towel.  Let rise in a warm place (85 to 90 degrees) until light and double in bulk. About 50 to 60 minutes.  Stir down dough. Turn into well greased 8 inch round (1 1/2 or 2 quart) casserole.  Let rise in warm place until light, 30 to 40 minutes.
Bake at 350 degrees for 40 to 50 minutes until brown.  Turn out on rack and brush top with soft butter and sprinkle with salt.

Irish Soda Bread
*******************************

3 cups of sifted flour
2/3 cup of sugar
1 tablespoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
1 1/2 cups of seedless raisins
2 eggs, beaten
1 3/4 to 2 cups of buttermilk
2 tablespoons of melted shortening

*(Or 1 1/4 cups milk and 1 1/2 tbsp. vinegar in place of buttermilk)
Sift together flour, sugar, baking powder, soda and salt.
Add liquid mixture to dry until flour is moistened.  Turn batter into greased loaf pan 5 1/2 x 9 1/2 inches.  Bake at 350 degrees about 1 hour. Remove from pan immediately.

Whole Wheat Honey Bread
*******************************

4 1/2 to 5 cups of white flour
2 1/2 cups of whole wheat flour
1 tablespoons of salt
2 packages of yeast
1 cups of milk
1 cup of water
1/2 cups of honey
3 tablespoons of shortening
1 egg
Combine whole wheat flour, 1 cup white flour, yeast, and salt; mix well.  Heat water, milk, honey and shortening to about 120 degrees (warm in microwave using temperature probe).
Add to flour mixture.  Add egg and beat on high for 3 minutes. Stir in enough of remaining white flour to make stiff dough.
Turn onto floured surface and knead for 5 minutes, until no longer sticky.  Put into greased bowl, cover, and let raise until double (takes about 1 hour).  Punch down.  Divide into two.  Shape into loaves.  Put into greased 9x5 inch loaf pans.
Let raise until doubled, about 1 hour.  Bake at 375 degrees for 30 minutes.  Makes 2 loaves.
