We have had some chatter on the back channels (e-mail) about Hot Chocolate or Cocoa for out camping or just around the house use and Ms. Jean at Adventure Foods sent this out to us so I want to share it with you. :D

Thought I would throw a few recipes on the fire for you.

The first recipe is the one I have always used

COCOA MIX

1 lb. cocoa (4 cups)
2 lb. confectioners sugar (4 cups)
6 lb. dry milk (15 cups)
1 tsp. salt

Sift cocoa, if necessary. Mix with sugar and dry milk. Package in
large plastic bags and measure out what you need when you're ready to make cocoa. Or package in smaller plastic bags for fewer servings.

To make 20 servings, mix 4 cups of mix with 1 gallon warm water. Heat until right temperature to serve, but do not boil.

To make 5 servings, mix 1 cup of mix with 4 cups of warm water. Heat until right temperature to serve, but do not boil.

I use 1/4 cup mix to 1 cup hot water or for richer hot chocolate I use milk.

Hot Cocoa Mix
For a hot cocoa twist, try different flavored coffee creamer.

5 cups powdered milk
2 cups powdered coffee creamer
1 1/2 cups cocoa powder, sifted *
3 cups powdered sugar
1/3 cup granulated sugar
miniature marshmallows, optional
1. With a wire whisk, thoroughly mix dry ingredients together. Stir in
marshmallows. Divide mix into containers.
2. Attach instructions to jar: To use, fill mug one third full of cocoa mix
and then stir in hot water.

French Vanilla Cocoa Mix

10 1/2 cup nonfat dry milk
4 cups confectioner's sugar
2 -8 ounce jars of French Vanilla flavored nondairy powdered creamer
3 1/2 cups Nestlé's Quick
2 3/4 cup nondairy powdered creamer
1/2 teaspoon salt

Combine all ingredients in a large bowl. Then pour into pint size canning
jars. This recipe will yield approximately 8 pint size gift jars.

For the Tag:

French Vanilla Cocoa Mix
Combine 3 heaping tablespoons
of French Vanilla Cocoa Mix into
a mug of hot water or milk; stir.

Cinnamon Coffee Cocoa in a Jar

2 cups granulated sugar
1 1/2 cups instant coffee or coffee substitute
1 cup nondairy powdered creamer
1/2 cup cocoa powder
1/2 teaspoon ground cinnamon

Combine all the ingredients & pour into an airtight jar.

Instructions for gift-giving:

Cinnamon Coffee Cocoa

1 cup hot water
2 to 3 tablespoons Cinnamon Coffee Cocoa mix

Stir well. Enjoy. This yields 40 servings.
Please use within 6 months.

Amaretto Cocoa Mix

10 1/2 cup nonfat dry milk
4 cups confectioner's sugar
2 8 ounce jars of Amaretto flavored nondairy powdered creamer
3 1/2 cups Nestlé's Quick
2 3/4 cup nondairy powdered creamer
1/2 teaspoon salt

Combine all ingredients and store in an airtight jar. This recipe will yield approximately 8 pint size gift jars.

Attach this to the Jar:
Amaretto Cocoa Mix
Combine 3 heaping tablespoons of cocoa mix into hot water or milk; stir.

CAFE MOCHA MIX
1 1/2 cups instant coffee granules
1/4 cup unsweetened cocoa
1/4 cup powdered nondairy creamer
6 tbs. powdered sugar

Place all ingredients into a blender or food processor and mix until finely
ground. Store in an air tight jar.

ATTACH TO JAR:

To make Cafe Mocha:
Mix 1-2 tablespoons mix into 3/4 cup boiling water.

WHITE HOT CHOCOLATE MIX

1 tsp. vanilla powder
1 tsp. dried orange peel
1/2 C. white chocolate chips

Combine ingredients and place in a small decorative clear glass jar.

Attach a gift card with these instructions:
Combine 1 1/2 cups milk and 1/4 cup White Hot Chocolate Mix in a pan over medium heat. Whisk until the chocolate is melted.

ITALIAN MOCHA BEVERAGE MIX

1/2 C. instant coffee
1/2 C. sugar
2 1/4 C. nonfat dry milk
1/4 C. cocoa powder

Mix thoroughly and put into a blender a couple cups at a time and blend to a fine powder.

To use, add approximately 2 rounded teaspoons per cup of boiling water, or less, to suit your own taste.

TOFFEE MOCHA BEVERAGE MIX

2/3 C. instant coffee
1 C. powdered nondairy creamer
1/2 C. nonfat dry milk
1/4 C. cocoa powder
1 C. brown sugar, packed

Mix thoroughly and put into a blender a couple cups at a time and blend to a fine powder.

To use, add approximately 2 rounded teaspoons per cup of boiling water, or less, to suit your own taste.

SWISS MOCHA BEVERAGE MIX

1 C. instant coffee
1 C. sugar
2 C. nonfat dry milk
4 Tbsp. cocoa powder

Mix thoroughly and put into a blender a couple cups at a time and blend to a fine powder.

To use, add approximately 2 rounded teaspoons per cup of boiling water, or less, to suit your own taste.

MALTED HOT COCOA MIX

1 (25.6 oz.) box nonfat dry milk powder
6 C. miniature marshmallows
1 (16 oz.) container instant chocolate milk mix
1 (13 oz.) jar malted milk powder
1 C. sifted confectioners' sugar
1 (6 oz.) jar powdered nondairy creamer
1/2 tsp. salt

In large bowl, combine all ingredients and stir until well blended. Store in
an airtight container. Keep in a cool place. Makes about 20 cups or 10
gifts.

To serve: In mug, pour 6 ounces of hot water over 1/3 cup cocoa mix, and stir until well blended.

MOCHA COCOA BEVERAGE MIX

2 2/3 C. nonfat dry milk
3/4 C. instant cocoa mix
1/2 C. instant coffee
1/4 C. powdered nondairy creamer
1/4 C. confectioners' sugar

Mix thoroughly and put into a blender a couple cups at a time and blend to a fine powder.

To use, add approximately 2 rounded teaspoons per cup of boiling water, or less, to suit your own taste.

HOT COCOA MIX

1 (8-qt.) box instant powdered milk
1 (16 oz.) jar nondairy creamer
1 (2 lb.) box Nestlé's Quik®
1 (1 lb.) box confectioners' sugar

Sift sugar and mix together. Add 2 cups miniature marshmallows, if desired.

To use, fill a mug half full of mix. Add boiling water

RASPBERRY COCOA MIX
3 C. instant hot cocoa mix
1 pkg. unsweetened raspberry Kool-Aid mix

Combine all ingredients in a a sealable container. Shake well until blended.Store in an airtight container.

To serve: Stir 2 heaping tablespoons into a coffee mug of hot water

SPICED COCOA MIX

2 C. nonfat dry milk powder
1/2 C. powdered nondairy creamer
1/4 C. unsweetened cocoa powder
1/3 C. sifted confectioners' sugar
3/4 tsp. ground cinnamon
1/2 tsp. ground nutmeg

Combine all ingredients, and mix thoroughly.

For each serving, combine 1/3 cup Spiced Cocoa Mix and 3/4 cup boiling
water. Stir to dissolve.

Variation
Stir in 1 teaspoon instant coffee powder or 1 or 2 tablespoons coffee
liqueur with a cinnamon stick. Makes eight 6-ounce servings.
