Smoked Mullet Dip

Ingredients:
About a pound or so of smoked mullet (you can use smoked tuna, but why?)
1 pkg. (8 oz) cream cheese
1 pint sour cream
3 tablespoons sweet pickle relish
3 tablespoons finely chopped onions
3 tablespoons finely chopped celery
1 or 2 teaspoons of garlic powder or fresh chopped garlic (onion powder is good too)
Little bit (or a lot) of cayenne to taste

Set the cream cheese on the counter to soften up while you get everything else ready. Pick through the mullet and get all the bones out, kinda crumbling up the meat. Chop the celery and onion (and garlic if you're using fresh). Mix everything together 'til there aren't any chunks of cream cheese visible. Let set in the fridge to meld the flavor for a couple of hours.

Take the bowl out on the dock, have a seat, watch the sun set and eat it with soda crackers and your favorite beer.

(Edit) I have heard you can make smoked fish dip with other "rough" fish - carp and gar, for example. I haven't ever tried 'em.
