Raspberry Chocolate Chip Meringues Shared by Victoria

3 egg whites
1/8 teaspoon salt
1/8 teaspoon cream of tartar
3/4 cup granulated sugar
3 to 4 teaspoons raspberry gelatin powder (or, any flavor)
1 to 1 1/4 cups semisweet chocolate chips

Beat egg whites, sugar and cream of tartar until stiff, but not dry. Gradually beat in sugar and gelatin. Fold in semisweet chocolate chips. Drop by small teaspoons onto two greased cookie sheets. Bake at 250 degrees F for 20 minutes. Then turn off oven and leave in oven for 30 minutes.
Place one cookie sheet on the top oven rack and one on the bottom oven rack.
Cool.

Store in an airtight container. At, room temperature.
Makes approximately 90 meringues.

Easy Stacked Dinner Shared by Treva

1 pound lean ground beef, cooked or leftover roast, diced
6 medium potatoes, peeled and sliced
3 large carrots, sliced
1 large onion, diced
1 medium green pepper, diced
2 cups canned whole tomatoes
1/4 teaspoon pepper
1/4 teaspoon dried basil
3 tablespoons steak sauce
1/4 cup Parmesan cheese

Crumble cooked hamburger in casserole dish. Layer potatoes, carrots, onion and pepper. Pour tomatoes over layers. Sprinkle pepper, basil and cheese over tomatoes. Cover with lid or aluminum foil. Bake in preheated 350 degree F (180 degree C) oven for 45 minutes or until vegetables are tender.

Serves 4.

German Sausage Chowder Shared by Treva

Yummy and warm... polska kielbasa, potatoes and Swiss cheese make up this satisfying chowder. This is also delicious with Cheddar cheese in place of the Swiss.

Makes 8 servings.

3 cubes chicken bouillon
5 medium potatoes, cubed
1 (16 ounce) package kielbasa sausage, sliced
1 onion, diced
1 small head cabbage, cored and sliced
1 (12 fluid ounce) can evaporated milk
1 pound Swiss cheese, shredded
Salt and pepper to taste

Place the bouillon cubes, onion, potatoes, and cabbage into a large soup pot. Pour in enough water to cover the vegetables by about 1 inch. Bring to a boil, then simmer over medium heat for 15 minutes.

Add the sausage, and cook for an additional 20 minutes. Reduce heat to
low,and stir in cheese and evaporated milk.
Cook just until heated through and cheese is melted - do not allow the
soup to boil. Remove from heat, and serve immediately.

Kitty Litter Cake Shared by Aggie in Mesa, Arizona

1 box spice or German chocolate cake mix
1 box white cake mix
1 package white sandwich cookies
1 large package vanilla instant pudding mix
A few drops green food coloring
12 small Tootsie Rolls or equivalent

Serving "dishes and utensils":

1 NEW cat-litter box, washed well and dried
1 NEW pooper scooper, Washed well and dried

Prepare and bake cake mixes, according to directions, in any size pan.
Prepare pudding and chill. Crumble cookies in small batches in blender or food processor. Add a few drops of green food coloring to 1 cup of cookie crumbs. Mix with a fork or shake in a jar. Set aside.

When cakes are at room temperature, crumble them into a large bowl. Toss with half of the remaining cookie crumbs and enough pudding to make the mixture moist but not soggy. Pour mixture into litter box.

Unwrap 3 Tootsie Rolls and heat in a microwave until soft and pliable.
Shape the blunt ends into slightly curved points. Repeat with three more rolls. Bury the rolls decoratively in the cake mixture. Sprinkle remaining white cookie crumbs over the mixture, then scatter green crumbs lightly over top.

Heat 5 more Tootsie Rolls until almost melted. Scrape them on top of the cake and sprinkle with crumbs from the litter box. Heat the remaining Tootsie Roll until pliable and hang it over the edge of the box. Place box on a sheet of newspaper and serve with scooper.

Pork Fried Rice Shared by Treva

When I have steamed rice left from a previous meal, I like to use it in this recipe. It's quick, easy and economical.

8 cups rice, cooked
3 cups lean cooked pork, diced
4 eggs, scrambled
2 cups green onion, chopped
Soy sauce

In wok or skillet, scramble eggs and remove from pan. Add 2 to 3 tablespoons of oil and brown pork (salt and pepper to taste). Add scrambled
eggs back to pan. Add cooked rice and stir well. Pour in 1 cup soy sauce ( or more to your taste). Stir well. Add green onion, stir well and serve.

(Water chestnuts and/or finely diced celery or green pepper can also be added at the same time as the onions.)

Spicy Slow Cooker Black Bean Soup Shared by Treva

Dried black beans are cooked all day in a slow cooker with chicken broth,
canned jalapenos, cumin, chili powder and cayenne pepper.

1 pound dry black beans, soaked overnight
4 teaspoons diced jalapeno peppers
6 cups chicken broth
1/2 teaspoon garlic powder
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon cayenne pepper
3/4 teaspoon ground black pepper
1/2 teaspoon hot pepper sauce

Drain black beans, and rinse.

Combine beans, jalapenos, and chicken broth in a slow cooker. Season with garlic powder, chili powder, cumin, cayenne, pepper, and hot pepper sauce.

Cook on HIGH for 4 hours. Reduce heat to LOW, and continue cooking for 2 hours, or until you are ready to eat.

Serves 6.

Pistachio Cake

Cake:
1 (18.25 ounce) box white cake mix
4 eggs
1/2 cup oil
1 package pistachio instant pudding mix
1 cup club soda

Mix all the cake ingredients together and put into a sprayed Bundt pan.
Bake at 350 degrees F for 45-50 minutes or until cake tests done.

Frosting:
1 pint heavy whipping cream
1 cup milk
1 package pistachio instant pudding mix

Whip all ingredients until stiff. Frost cake and store in the refrigerator.

NOTE: I chill my bowl and beaters before I make the whipped cream. I am
sure you could probably use any flavor pudding mix.

Sausage Cheese Dip

Brown 1 pound of breakfast sausage and drain fat off. Set aside.

Melt a block of Velveeta cheese with a large jar of your favorite salsa.
Add the sausage and mix well. Keep warm in a chafing dish or a smallcrockpot.

Serve with tortilla chips.

Homemade Frozen Hashbrowns

Boil potatoes until transparent looking. Should be tender but still firm.
Add salt. Drain and cool. Cut for hash browns. Press into cookie sheet.
Score and freeze. Or press into foil-lined fry pan. Remove wrap and freeze.

To cook: Cook covered for 5 minutes. And 5-10 minutes uncovered.

Smothered Pork Chops

2 cans cream of mushroom soup
1 can French onion soup
1 envelope brown gravy mix
2 to 4 pounds pork chops

Mix the first three ingredients together in a blender. Put pork chops into a baking dish, then pour gravy over chops. Cover and bake at 350 degrees F for 3 hours.

Roasted Sesame Chicken

1 (3 pound) roasting chicken
1/4 teaspoon salt
1/4 teaspoon black pepper
1 medium onion, quartered
1/2 lemon
1/4 cup dark soy sauce
1/4 cup toasted sesame oil

Preheat oven to 450 degrees F.

Wash chicken thoroughly and pat dry. Season cavity with salt and pepper,and stuff with onion and lemon. Brush skin with soy sauce and sesame oil.
Bake for 15 minutes, then reduce the temperature to 350 degrees F. Bake for an hour and 15 minutes, or until juices run clear. Allow to rest for 20 minutes before carving.

Chili Lasagna

Serving: 6 to 8

9 lasagna noodles
2 (15 ounce) cans no-bean chili
1 (15 ounce) container ricotta cheese
3 cups (12 ounces) shredded Cheddar cheese, divided
3 scallions, thinly sliced, divided
1 (8 1/2 ounce) can whole-kernel corn, drained
1 egg
1/2 teaspoon salt
1/2 teaspoon black pepper

Preheat the oven to 350 degrees F. Coat a 9 x 13-inch baking dish with
nonstick cooking spray.
Cook the lasagna noodles according to the package directions; drain.

Meanwhile, in a medium bowl, combine the ricotta cheese, 2 cups Cheddar cheese, 2 sliced scallions, the corn, egg, salt and pepper; mix well.

Spread 3/4 cup chili over the bottom of the baking dish. Place 3 lasagna noodles over the chili. Place half of the ricotta mixture evenly over the noodles then top with half of the remaining chili. Place 3 noodles over the chili then top with the remaining cheese mixture. Place the 3 remaining noodles over the cheese mixture then top with the remaining chili. Cover tightly with aluminum foil.

Bake for 30 minutes then remove the foil and sprinkle the lasagna with the remaining 1 cup Cheddar cheese. Bake for 10 more minutes. Remove from the oven, sprinkle with the remaining scallions, and let sit for 5 minutes
before serving.

Rice Batter Bread

1 cup cooked rice
1/4 cup cornmeal
2 cups buttermilk
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon oregano
2 eggs, beaten
1 tablespoon butter, melted

Combine rice and cornmeal. Stir in buttermilk and add baking soda, salt,oregano, eggs and butter. Blend well. Turn batter into greased loaf pan.
Bake in oven preheated to 325 degrees F for 1 hour.

Lime Ambrosia Salad

2 small boxes lime gelatin
2 cups boiling water
2 (8.25 ounce) cans crushed pineapple in syrup
1/2 cup cold water
2/3 cup evaporated milk
1/2 cup miniature marshmallows
1/2 cup flaked coconut

Dissolve gelatin in boiling water. Stir in pineapple with syrup and cold water. Chill until mixture mounds from a spoon.

Stir in evaporated milk, marshmallows and coconut. Pour into a 6-cup mold.
Chill until firm.
Unmold onto lettuce leaves.

Magic Cookie Bars

Crunchy and delicious treat, made quick 'n easy right in the baking pan.

1 1/2 cups Kellogg's Corn Flake Crumbs
3 tablespoons sugar
1/2 cup (1 stick) regular margarine or butter, melted
1 cup coarsely chopped Diamond Walnuts
1 cup (6 ounce package) semi-sweet chocolate morsels
1 1/3 cups (3 1/2 ounce can) flaked coconut
1 can Borden Eagle Brand Sweetened Condensed Milk

Measure corn flake crumbs, sugar and margarine into 13 x 9 x 2-inch baking pan; mix thoroughly. With back of tablespoon press mixture evenly and firmly in bottom of pan to form crust.

Sprinkle walnuts evenly over crust. Scatter chocolate morsels over walnuts. Sprinkle coconut evenly over chocolate morsels.

Pour sweetened condensed milk evenly over coconut. Bake in moderate oven ( 350 degrees F) about 25 minutes or until lightly browned around edges.
Cool. Cut into bars.

Yields 54 (2 x 1 inch) Magic Cookie Bars.

Butter Ball Soup

1 chicken, cut up
2 carrots, diced
2 celery stalks, diced
1/2 teaspoon salt
1/2 teaspoon pepper
8 to 10 slices bread (fresh)
1 stick (1/2 cup) margarine
1/4 teaspoon allspice
Egg noodles

Add chicken to 2 quarts water with carrots, celery and salt and pepper.
Bring to a boil, then simmer until tender.
Meanwhile, toast bread, then grate or shred to a fine consistency.
Melt butter; add bread and allspice and mix thoroughly. Shape into 1-inch
balls.
Add butter balls and noodles to chicken; simmer until done. :D
