Sweet-Potato Pie
This was in today's paper by Mike Thomas and as he said .... "First of all, you have to make the crust because it is not a homemade pie with a store-bought crust."
The crust.
Mix 1/4 teaspoon salt , 1/2 teaspoon baking powder , 1 tablespoon of sugar and three cups of flour.
Then cut in one cup of Crisco (lard is better, but not for your arteries)
Mix 5 tablespoons of water , 1 tablespoon of Lemon Juice and an egg. Merge the liquid with the flour until you can form a ball. You might need more water. This will make two crusts, one for the bottom and one for the top.
The Filling.
Take three big sweet potatoes and boil them until they are nice and soft.
Put a cup of sugar in a bowl with a stick of butter. ( the real stuff and if you want a stick and a 1/2).
Beat the sugar and butter then add three eggs.
Now skin the sweet potatoes and toss them in, add 6 ounces of evaporated milk, 3 tablespoons of flour , 1 tablespoon of vanilla and nutmeg. (fresh nutmeg is a lot better then the bottled ones). If you use the fresh use about half to three quarters of one.
Blend until smooth. DO NOT scrape the beaters they will collect any strings from the potatoes.
Pour this in the one pie shell and bake at 400 degrees till the top crust starts to turn brown, about 10 minutes, then turn the oven down to 350 and start checking for doneness after 30 minutes.
When done let it cool and then stick it in the frig overnight. (always better the next day)
