Vege-Bacon-Rice
1/2 pound bacon, chopped
1 small onion, chopped
2 cups long- or whole-grain rice, divided
2 (10-1/2-ounce) cans condensed chicken broth
1 (16-ounce) package frozen peas and carrots
*In a large skillet, cook the bacon and onion over medium-high heat for 8 to 10 minutes, or until the bacon browns. Stir in 1 cup rice and cook for 4 to 5 minutes, or until the rice is golden and the bacon is crisp.
*Add the broth, the remaining 1 cup rice, and the peas and carrots; mix well. Bring to a boil, cover, and reduce the heat to low. Simmer for 20 to 25 minutes, or until the liquid is absorbed and the rice is tender.
