Made this for a covered dish supper at the American Legion last night. Added a couple of things to kick it up....Some Old Bay Seasoning and a pound or so of surimi crab which is really Alaskan Pollock and taste like crab. I had to make numerous copies of the recipes it was so popular and went so fast!
Zucchini and cheese casserole
* I doubled this recipe and put it in a 9-by-13-inch pan.
* 2 cups zucchini, grated
* 1/2 medium onion, grated or chopped
* 1 1/2 cups Bisquick
* 3 eggs
* 1/2 cup oil
* 8 ounces grated sharp cheddar

Preheat oven to 350 degrees.

Mix all ingredients and pour into square pan sprayed with Pam.

Bake for 30 to 45 minutes, until an inserted knife comes out clean.
