Here is one of my favourite recipes , it's from a mate in Texas who is a regular on the Castbullet Forum I some times haunt , this and other recipes are all posted on the castpics page http://www.castpics.net/index.htm , there are also some bullet lube recipes that are absolutely brilliant if you happen to be a keen cast bullet shooter like me

1 cup corn meal(yellow)
1 cup milk
2 eggs
1 teaspoon salt
2 tablespoons cooking oil
1 can cream style corn
1 lb ground beef
shredded cheddar cheese(about cup)
1 small can (4.5 oz)chopped green chilies
While the meat is browning,mix the cornmeal,milk,salt,eggs,cooking oil,and cream style corn.
After meat is brown add the chilies into the meat.
Grease a baking dish and pour in half of the corn mixture.Add the meat on top of the mixture you poured in.Top the meat
with the grated cheese.Then pour rest of corn mixture over that.Bake at 400 for 30 minutes.

I LIKE that, Dave. Here's one similar, but without the hamburg. Came off the side of a box of cornmeal (yellow gritz).

Tex-Mex Cornbread
1 cup yellow corn meal
1 1/2 tsp baking powder;
½ Tsp salt
2 Tbsp oil
1 tsp sugar
1 egg, beaten;
1 ea 8 oz can cream style corn;
½ cup milk (½ cup water + 3 Tbsp powdered milk USE ONLY 1/3 cup water if steam baking};
4 oz (1 cup) shredded cheese;
Small onion chopped;
2-3 Tbsp jalapenos / peeled green chilies
8" SQR pan greased, 450F oven 20-30 minutes; or steam-bake on a BakePacker 35-40 minutes
