G'day guys.

This is the way I like to prepare and cook most of the fish i catch round here.

First, I fillet my bream. These are a bread and butter type fish here. Game little fighters that inhabit all of our coast line in one sub - species or another.

Next, to remove rib bones (I hate bones in my fillets.

Skin fillet.

Remove Pin bones. these are a line of small bones extending from the spine, out to the skin.

Once home, prepare the chips. i think you guys call em fries.

Cut spuds into chips.

Liberally season chips with Zatarains. (Thanks Keith, I owe you big time mate.) :D

Nuke chips for about 5 minutes. :D

break two eggs into a bowl & add a little milk.

Lightly coat fillets in plain flour, again liberally seasoned with Zatarains. :D

Dip in egg/milk mix and then cover with bread crumbs. :D

Have small dog standing by to pounce on anything dropped. :D

Give left-over milk/egg mix to said dog as reward for cleaning the floor. :D

While the oil in the deep frier is getting hot, wander out the back, & pick a lemon

Par fry the chips till they are just cooked and remove from the fat.

Gently place fillets into fat adding a handfull of par-fried chips.

Careful not to overload fryer - absorbs too much fat into the food. Cook till golden brown. :D

MMMMM....I'm putting some malt vinegar on my chips and mango fhabanero hot sauce on my fish right this very moment............In my imagination of course. :roll: Thanks for dinner Mick.
