Ingredients

2 cans Whole Kernel Corn, Un-drained
1 can Cream Style Corn
1 medium green pepper, chopped(Maybe some jalepeno too)
1 medium sweet onion, chopped
1 pint Sour Cream
1 Box, Jiffy Corn Bread Mix
16 oz. package shredded Cheddar Cheese

Preparation

1. Combine all ingredients in a Casserole Dish
2. Bake in preheated oven at 350 degrees for 1 hour or until center is bubbling

Why the Jiffy Corn Bread Mix ?

Is a crust for the creamed corn , or a filler ?

I have never tried it that way......... Just asking.

I will try it cause it sounds darn good..............................

My way...........

1 ... 1 pound can of corn (2 cups ) golden cream style corn
1 cup of milk
1 well beaten egg
1 cup of cracker crumbs
1/4 cup chopped onions
3/4 teaspoon of salt
1/2 cup buttered cracker scrums. Put some butter in a small cast iron skillet and when melted then add the cracker crumbs ......... mix and do not taste.

Heat the corn and milk. Add the egg gently and the next 4 ingredients and a dash of pepper , or more to taste.
Put in a greased 8 inch round baking dish. Sprinkle the buttered crumbs over the top and bake at 359 for 20 minutes.

Jiffy is what is on the store shelf up here........I suppose you can use other brands. Creamed corn is filler. I like some jalapeno in mine.
